Tio Pepe En Rama
This unclarified and unfiltered super fresh Fino is loved by many for its unique, fresh from the cask experience. En Rama is alive with flavour and has more nutty and yeasty aromas than the usual Tio Pepe and on the palate it is fresh and citrusy, with a complex, saline finish. A truly gastronomic wine it pairs perfectly with olives, almonds, oily fish and tapas.
The 2017 release of Tio Pepe en Rama has been made from a selection of 60 botas (large oak barrels), housed in González Byass centuries-old cellar La Constancia and Rebollo, in the heart of Jerez, Spain. Flores explains, “The barrels were specially chosen to represent the unique moment in the bodega when the venecia breaks the “flor” to open up the yeasty veil which covers this golden liquid and Tio Pepe En Rama emerges: raw and blooming with life.”
He continues, “Protected from the intense Levante winds of the long-forgotten summer and enabled the blanket of the the flor to protect the wine and reveal, at the beginning of spring, a version of Tío Pepe that is fragrant, intense, brilliant, salty and immaculate.”
Each year a different, yet authentic label is chosen, the design based on original artwork sourced from Tio Pepe’s historical archives, dating back to the late 1800’s.
