Gonzalez Byass Palmas Range

The Palmas range of sherries is a very limited release of aged wines. Bottled unfiltered and unclarified, the range shows a fascinating journey through the ages of the Tio Pepe solera and beyond.

Una Palma

The wine for Una Palma was selected from rare casks which retained a delicate covering of flor despite being more than six years old. Bottled unfiltered and unclarified this wine is dominated by the aroma of the flor, accompanied by the nutty character of the Palomino variety. Powerful and extremely dry on the mouth with a salty and slightly bitter finish.

Dos Palmas

An eight year old Fino selected from a tiny number of casks in the Tio Pepe Solera still retaining a delicate layer of Flor. More intense and much more concentrated than Una Palma. The flavour is fuller and drier and very long on the finish. Wonderful to drink on its own, but ideally needs a slice of dried jamón. Serve lightly chilled.

Tres Palmas

A fine and rare ten year old Fino that has been selected from the very small number of barrels still retaining a thin veil of flor after a decade of ageing. This additional ageing produces a Fino of atypical character; deeply coloured, full bodied and deliciously developed. Aromas of hazelnut, walnut, toffee and dried apricots are suggested on a compelling and characterful nose, whilst the palate is dry, rich and broad with layers of flavour and immense intensity.  An outstanding sherry that is delicious on its own or when paired with cheese plates and intense game dishes.

Cuatro Palmas

An extremely rare forty year old sherry. Drawn in tiny quantities from six casks known as ‘Museo Solera’. Deep in colour, intense on the nose with a rich and nutty taste. Bone dry and yet richly textured with tremendous length. Rounded texture, intensity without excess.
