When we heard the winemaking team in Jerez were working on a new Sherry Vermouth using an old 19th Century recipe, we couldn’t wait to get our hands on a bottle. As soon as it arrived in the office we experimented with everything from simple mixes to classic cocktails as well as just poured over ice, and it is sublime!
La Copa Vermouth is produced from 8 year old Oloroso and PX soleras and a blend of botanicals. These 8 botanicals (wormwood, savory, clove, orange, cinnamon, nutmeg, angelic root and cinchona bark) were carefully selected to achieve the perfect bitter-sweet, aromatic balance. Of course, like all good family recipes, the exact proportions are a closely guarded secret, kept under lock and key in the winery!
